How we get it

Soft squeezing of grapes, must fermentation at low temperatures (ranging 14 to 16 °C), ageing in steel tank.

How we work it:

The grapes, harvested early in the morning in small buckets drilled by about 16 kg, are squeezed softly through a pneumatic press. The obtained must, after a rapid cold freezing and transfer, will ferment at controlled temperature (14-16 ° C).
Refinement in steel tanks.

Technical data:

  • Alcohol: 13,0 % vol.
  • Sugar: 3,0 grammi/litro;
  • Total acidity: 6,40 grammi/litro
  • Volatile acidity: 0,26 grammi/litro
  • pH: 3,36

Organoleptic test:

Colour: Straw and greenish reflections.
Nose: Fruity, fresh and intense.
Mouth: Dry, delicate flavours of green apple.
